A new way to eat fish arrived in Faro in April. The space on Instagram says the restaurant’s name is Escama, “born from the need to elevate traditional Algarve cuisine in its strongest element, fish.” And there is no shortage of fish: real croaker, needlefish, cuttlefish, horse mackerel or redhead. CaféZique in Loulé opened in January 2020 and is in the hands of chef Leandro Araújo. At the opening, MAGG talked about what’s on offer on the nine-minute tasting menu, which includes the brioche moment served with “a wine from the Sintra region with a salty mineral density that accompanies the burrito,” the chef said, but now there are new offerings on the tasting menu.

In addition to a dish that completes the ten moments, the new menu features new flavors such as spider fish, sumac and lime. Only towards the third and middle, at the 5th moment, cuttlefish, potatoes, rose and sriracha are presented before the new bread moment: buttermilk bread.
